Cupcake mixture:
70 grams unsalted butter
1 ½ cups castor sugar
1 1/3 cups Plain flour
¼ tsp baking soda
2 tsp Baking powder
¾ cup cocoa
A pinch of salt
2 eggs
¾ tsp vanilla extract
1 cup milk
1. Preheat fan forced oven at 170 deg
2. Prepare muffin tin and line with cupcake papers
3. Sift together dry ingredients and set aside
4. In a bowl cream together butter and sugar until light and fluffy
5. Add the eggs one by one, beating well then stir in vanilla
6. Add flour mixture alternatively to milk, mix well
7. Bake for 10-15 mins depending on your oven or until skewer comes out clean
8. Decorate when cool
Butter cream icing
250 gm butter
500 gm icing sugar
4 Tb milk
1. Whip butter until light and fluffy
2. Add half the icing sugar
3. Add the milk
4. Add the rest of the icing sugar
5. Colour or flavouring can be added if you wish
