Apple and Raspberry Slice

Apple and Raspberry Slice Recipe

You will need:

1 1/2 cups wholemeal SRF

2 cups rolled oats

1/2 cup oat bran

1/3 cup shredded coconut

3/4 cup brown sugar

1 tsp mixed spice

2 tsp baking powder

2/3 cup canola or sunflower oil

1/2 cup low-fat plain yoghurt

1 egg

2-3 green cooking apples (un pealed), cored and finely diced

2 cups fresh or frozen berries (any berries or mixed berries are great)

Icing sugar to dust


1. Preheat oven 180c. Line a 24cm slice pan with baking paper.

2. Combine flour, oats, oat bran, sugar, mixed spice and baking powder in a large bowl. In a separate bowl, whisk together oil, yoghurt, and egg. Add to dry ingredients and mix well.

3. Press three-quarters of the mixture into the base of slice tin. Sprinkle with apples and berries. Top with remaining batter.

4. Bake for 30mins, until golden. Cool in tin. Dust with icing sugar before serving. Enjoy!!

Ideas: Serve warm or cold. Drizzle with custard. Add chopped nuts to apple/berry mixture. Use vanilla yoghurt if prefered. Sprinkle with almond flakes before baking.
