Fruit and Honey Museli Bar

Fruit and Honey Museli Bar Recipe

You will need:

1 cup rolled oats

1 cup rice bubbles

1\2 cup dried fruit

1\2 cup honey

125g butter

4 Wheet-Bix crushed

1 cup coconut

3\4 cup brown sugar

1\2 cup peanut butter

Method:

Grease a 19X29cm lamington pan.

Combine oats, rice bubbles, Wheet-Bix, coconut and fruit into a large bowl.

Combine sugar, honey, peanut butter in a saucepan, stir constantly over heat without boiling, or until butter is melted and sugar is dissolved.

Bring to the boil, reduce heat and simmer for five minutes, stirring constantly or until thickens.

Stir honey mixture into dry ingredients, press evenly into prepared tin, cut into squares while warm and refrigerate.

*Will keep for one week in an air tight container. Or in freezer for longer :)

*Use nut-free alternative spread from supermarket for allergy free
