Chocolate Brownies

GOOEY ON THE INSIDE CRISPY ON THE OUTSIDE CHOCOLATE BROWNIES: Gluten, wheat, dairy, sugar, egg free

These brownie’s were a real hit at Sundays (21/07/13) Bellarine Kids expo.

The reason? They’re healthy and they taste amazing! Kids and parents alike were downing them and I did so love the look on the kids faces when their parents told them that they were made from black beans! The black beans give them that beautiful ‘mud cake’ texture while the Cacao and dark chocolate give a lovely chocolate flavor. Adding in the buckwheat, quinoa and coconut butter means that you’re filling up on Super foods while still enjoying a treat.

Ahhh, this chocolate brownie really is a win/win afternoon snack or lunchbox filler!

 

Ingredients

  • 2 cans black beans
  • 4 Tb cacao
  • 1 cup flaked quinoa
  • ¼ cup ground buckwheat groats or buckwheat flour
  • 1/2 tsp salt
  • 6 Tb honey
  • 1/2 cup coconut butter 
  • 4 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 cup sugar free dark chocolate (at least 75% cocoa minimum) broken up – I use Luvju

 

Method

Preheat oven to 160 degrees. Grease an 8x8 pan.

Combine all ingredients except chocolate in a food processor and blend until completely smooth.

Stir in the chocolate.

Pour into pan and sprinkle with extra chocolate if you want.

Cook for about 45 minutes then let cool for at least 15 minutes in the pan (I actually put mine into the fridge for a little while to help it to set before cutting it up).
